Feeding every adventure: How our Condover Hall kitchen team gets mealtimes right, every time

Meet the team behind every meal at Condover Hall

Ask any group leader what they remember most about a residential, and alongside the muddy boots and late-night giggles, you’ll usually hear something about the food.  

Behind every meal at Condover Hall is Jason, our catering manager, who’s been feeding hungry adventurers for 11 years. He now leads a team of 5 chefs and 35 catering assistants, working shifts ranging from 8 to 40 hours a week, to make sure every plate that leaves the kitchen is right for the person eating it. 

Getting dietary care right, before anyone arrives

Nothing is left to chance. Every group completes a Party Leader pack in the weeks before arrival, capturing every dietary requirement and allergy. On check-in day, reception goes through it all again face-to-face with the party leader, so nothing is missed. Because some specialist ingredients can be hard to source, Jason asks for at least two weeks’ notice, but the earlier the better. 

Once requirements are confirmed, an allergen matrix, visible to guests and staff alike, shows exactly what’s in every dish. For gluten-free cooking, a dedicated fryer and grill keep things separate from the rest of the kitchen, and the whole catering team goes through regular refresher training so everyone stays sharp.

Anyone with a dietary requirement or allergy, especially those juggling more than one, wears a wristband, and their names are shared with the serving team so staff always know who needs what. For the trickiest combinations, meals are sometimes plated up in advance, cling-filmed, and kept ready and waiting. Halal meat is ordered in specially; kosher requirements, which are harder to source, are met with a vegetarian alternative instead.

And if something is flagged once a group is already on site? Jason’s team simply adapts, as quickly and safely as they can.   

Something for every appetite

Every meal on Condover’s set menu comes with two main choices, plus a vegetarian and a vegan option, as standard, at every sitting. It’s designed so a week-long stay never feels repetitive, and it covers most needs without much call for last-minute swaps.  

Fussy eaters and younger children are well catered for too: teachers ask for chicken nuggets or a cheese sandwich several times a week and Jason’s team is always happy to oblige. As Jason puts it, it’s vital that children eat, given how much energy they burn at Condover Hall. Some families bring their own food for specific needs, which the kitchen is happy to cook, provided it’s clearly labelled and free from nuts. 

And the crowd-pleasers? Breakfast pastries are a firm favourite, while the fresh salads and fruit go down particularly well with the teachers. 

Keeping mealtimes running like clockwork

Condover’s restaurant seats 290 at a time, and Jason is proud that catering standards don’t waver whatever the size of the group, though larger schools are split across staggered timeslots to keep queues moving.  

Mealtimes are built tightly around the activity schedule, so there’s little flexibility if a group runs late – the kitchen works to a short window to make sure everyone gets fed. For groups with early departures, Jason’s team can bring mealtimes forward or send guests off with a packed lunch of a sandwich, crisps, fresh fruit and biscuits. Late arrivals are offered a packed tea, or a cold buffet if they arrive after 7pm once hot food service has finished. Sports teams heading off to away fixtures can take a packed lunch too. 

Support, every step of the way

On arrival, any dietary question goes first to the team on the restaurant door, then to the catering manager, restaurant manager or head chef, all of whom are on hand in the restaurant.  

Feedback is gathered from every group before they leave and anything that can be fixed mid-stay, is. And should the worst happen, the catering team includes trained first aiders who can administer EpiPens, with a break-glass emergency supply currently being installed, alongside the usual advice for guests to carry their own. 

It’s this quiet, careful attention to detail, long before a single tray hits the counter, that means every student at Condover Hall, whatever they can or can’t eat, gets to sit down to a meal that’s exactly right for them.
